do I need to learn all levels of turn undead in addition to all the other spells, or can I learn only one of any level turn undead in addition to all other spells? I ask because turn undead is one spell with five levels of strength.

also do i need to know resurrect and slay undead to be considered Pious

You would need to learn all levels of Turn Undead, but not Resurrection or Slay Undead.

Yes, you would need to learn Sanctuary as well.
